Berry Fresh! Tastes like summer!

I made these cupcakes in May for a birthday party. They were fresh and light and perfect to get me feeling like summer! Too bad we've had roughly 3 weeks of pure rain which have since removed all summer feelings from me.

Here they are Lemon cupcakes filled with fresh raspberry and icing puree. So yummy! I purchased a 'Betty Crockers Best Cupcakes recipe book', and these little beauties were in there. So many amazing cupcake recipes that I need to try, and for those of you who think, I don't want to make cupcakes from scratch! It just seems like too much work, then these recipes are for you! They all use cake mixes with other things added to them. For example, this particular recipe called for a white cake mix and to make it lemon, you just mix in lemon zest. Also, the icing was the tubs of Betty Crocker pre-made stuff, again just adding things to it. So easy, and incredibly tasty!


Nothing better than biting into a cupcake and being surprised with raspberry goodness.

  8. This seems simple enough. Let's see if we can figure it out:

    RECIPE

    - 1 Betty Crocker white or yellow cake mix (follow instructions on package)
    - 2 tubs of Betty Crocker vanilla frosting, divided
    - zest of 1 lemon
    - 1/2 pint of fresh raspberries, rinsed and air dried

    INSTRUCTIONS

    1. Follow cake mix instructions
    2. Add lemon zest
    3. Puree raspberries with 1 tub of frosting
    4. Fill cupcake wells 1/3 full of cake batter (a couple tablespoons)
    5. Add a teaspoon of raspberry yummy
    6. Fill cupcake wells to 2/3 full with cake batter
    6. Bake as directed on packaging
    7. Cool.
    8. Ice with white fluffy frosting and top with a fresh raspberry.

    She has one of those fancy-shmancy cupcake doo-dads that allow you to fill the cupcake after it's baked. ;-)

  15. Ahhh... I'm SO sorry. I just discovered there were a ton of requests for the recipe! It is on the betty crocker website at the link that someone else provided. Again, sorry! I don't tend to write all the recipes I use on here! Hope you enjoyed the blog though! And Melba Toast is right, I do have a cupcake fillin icing tip. : ) I'll try and be a little more vigilant in looking at the comments!
